1/4 cup rolled oats (use certified gluten-free oats if needed)

1/2 tsp vanilla extract (optional)

Cooking spray or a small amount of olive/coconut oil

Blend the batter:
In a blender or food processor, combine cottage cheese, eggs, oats, baking powder, and any optional flavorings. Blend until smooth.

Heat the pan:
Preheat a non-stick skillet over medium heat. Lightly grease with oil or cooking spray.

Pour small rounds of batter onto the pan. Cook for 2–3 minutes per side, or until golden and cooked through.
