Ingredients:
  • 1 cup cottage cheese (low-fat or full-fat)
  • 3 large eggs
  • 1/4 cup rolled oats (use certified gluten-free oats if needed)
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract (optional)
  • Pinch of cinnamon (optional)
  • Cooking spray or a small amount of olive/coconut oil

Instructions:
  • Blend the batter:
