Ingredients (1–2 servings, makes 4–6 small pancakes)
½ cup cottage cheese
2 large eggs
½ cup rolled oats OR ⅓ cup oat flour (oats count as “flourless”; no wheat flour used)
½ tsp baking powder (optional, for fluffiness)
½ tsp vanilla extract
1–2 tbsp honey or maple syrup (optional)
Pinch of salt
Butter or oil for cooking

⭐ Instructions
Blend the batter
Add cottage cheese, eggs, oats, baking powder, vanilla, sweetener, and salt to a blender.
Blend for 20–30 seconds until smooth.
Heat the pan
Lightly grease a nonstick pan with butter or oil and heat on medium.
Cook pancakes
Pour small circles of batter (2–3 tbsp each).
Cook for 1–2 minutes until bubbles form and edges look set.
Flip and cook 30–60 seconds more.
Serve
Top with berries, honey, yogurt, peanut butter, or whatever you like.
