Fajita Chicken Casserole
Ingredients (Low-Point Version)
• 4 boneless, skinless chicken breasts, cut into bite-sized pieces (0 points)
• 1 packet (1 oz) fajita seasoning mix (store-bought can be 3-4 points, but homemade is 0 points)
• 1 tablespoon olive oil (4 points) → Can swap for cooking spray (0 points)
• 1 red bell pepper, thinly sliced (0 points)
• 1 yellow bell pepper, thinly sliced (0 points)
• 1 green bell pepper, thinly sliced (0 points)
• 1 small onion, sliced (0 points)
• 1 cup fat-free shredded cheddar cheese (4 points)
• ½ cup plain nonfat Greek yogurt (0 points) (as a creamy topping instead of sour cream)
Instructions:
1. Preheat oven to 375°F (190°C).
2. In a bowl, toss the chicken with fajita seasoning and olive oil (or spray).
3. In a baking dish, layer chicken, peppers, and onions evenly.
4. Bake uncovered for about 25-30 minutes, or until chicken is fully cooked.
5. Sprinkle cheese on top and bake for another 5 minutes until melted.
6. Serve hot with nonfat Greek yogurt as a creamy topping!
