Ingredients:

    • 400 grams of fresh cabbage
        • 1 teaspoon salt
        • 1/2 teaspoon baking soda
        • 1 apple

      • 1 carrot
      • A bunch of spring onions
      • Juice from half a lemon

 

      • 4 tablespoons of yogurt
      • 2 tablespoons honey
      • 3 cloves of garlic, minced
  • 1 teaspoon mustard

Directions:

1. Prepare the Cabbage:

      1. Shred the cabbage and place it in a bowl.
      2. Sprinkle with salt and baking soda, and let it sit for 20 minutes to soften.

    1. Squeeze the moisture out of the cabbage.

2. Prepare the Vegetables:

        1. Grate the apple and carrot.
        2. Chop the spring onions finely.

 

3. Make the Dressing:

  1. In another bowl, combine lemon juice, yogurt, honey, garlic, and mustard.

4. Assemble the Coleslaw:

      1. Mix the cabbage, apple, carrot, and spring onions in a large bowl.
      2. Pour the dressing over the vegetables and toss well to combine.

5. Chill:

  1. Chill the coleslaw in the refrigerator for 30 minutes before serving.
