Eggplant Roll-Ups with Creamy Ricotta and Spinach
Ingredients:
2 medium eggplants, sliced lengthwise into 1/4-inch thick strips
1 cup ricotta cheese
1 cup fresh spinach chopped
1/2 cup grated Parmesan cheese
2 garlic cloves, minced
1 egg
Salt and pepper to taste
1 cup marinara sauce
2 tbsp olive oil
Instructions:
Preheat oven to 190°C (375°F).
Brush eggplant slices with olive oil, season with salt and pepper.
Grill or bake eggplant slices until soft and pliable, about 5-7 minutes per side.
In a bowl, mix ricotta, spinach, Parmesan, garlic, egg, salt, and pepper.
Spread a spoonful of ricotta mixture on each eggplant slice, then roll up tightly.
Place roll-ups seam-side down in a baking dish.
Spoon marinara sauce over roll-ups.
Bake for 20 minutes until heated through and bubbly.
