Egg Salad
Ingredients:
- 2 hard-boiled eggs, halved
- 1 cup mixed salad greens
- ½ cup cherry tomatoes, halved
- ¼ cup green olives
- ½ cup cooked chickpeas
- 3 tbsp hummus
- 2 tbsp crumbled feta cheese
- 1 tbsp olive oil
- ½ tsp paprika
- Fresh parsley, chopped
- Salt and black pepper to taste
Instructions:
Place the salad greens in a bowl.
Add hummus in a generous dollop.
Top with cooked chickpeas (sprinkle with paprika if desired).
Arrange egg halves, cherry tomatoes, and olives around the bowl.
Sprinkle crumbled feta and chopped parsley.
Drizzle olive oil, season with salt and black pepper.
Serve immediately.
