Egg & Citrus Rainbow Salad
Ingredients:
2 hard-boiled eggs, halved
1/2 cup cucumber slices
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/2 cup mango, diced
1/2 cup orange or mandarin segments
1/4 cup radish slices (optional)
1–2 cups fresh green lettuce leaves
Optional Dressing:
1 tbsp olive oil
1 tbsp fresh lemon or orange juice
Salt & pepper to taste
Instructions:
Prep Ingredients: Boil eggs and slice in halves. Chop fruits and vegetables into bite-sized pieces.
Assemble Salad: Start with a base of fresh lettuce. Layer cucumber, tomatoes, onions, mango, citrus, and radish around the bowl. Place eggs on top.
Dress: Drizzle with the citrusy dressing. Sprinkle with salt & pepper.
Serve: Best enjoyed fresh and chilled!
