Ingredients:
1 cup graham cracker crumbs
4 tablespoons unsalted butter, melted
2 tablespoons sugar
2 (8 oz) packages cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup sour cream
Directions:
Preheat your oven to 325°F (163°C) and line a muffin tin with 12 paper liners.
Mix graham cracker crumbs, melted butter, and 2 tablespoons sugar in a bowl. Press the mixture firmly into the bottom of each liner.
In a large bowl, beat the cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then vanilla extract and sour cream, beating until just blended.
Divide the mixture evenly among the prepared cups, filling each about 3/4 full.
Bake for 20-25 minutes, or until the centers are just set. Cool to room temperature, then refrigerate for at least 2 hours before serving
