Easy Baked Chicken with Potatoes

This is a very easy, quick, and budget-friendly recipe that only requires a few simple ingredients. The chicken comes out tender and juicy, while the potatoes soak up all the delicious flavors. Perfect for a family meal!


Ingredients:

  • 2.5 kg (88 oz) chicken pieces (thighs, drumsticks, or mixed cuts)

  • A splash of vinegar (optional)

  • Salt & black pepper (to taste)

  • 1 tsp paprika

  • 10 cloves garlic (whole, not crushed)

  • ½ glass (about 120 ml) white wine (or chicken broth/water)

  • 1 kg (35 oz) potatoes

  • A drizzle of extra virgin olive oil


‍ Directions:

  1. Marinate the Chicken

    • In a large mixing bowl, add the chicken pieces.

    • Season with vinegar (optional), salt, pepper, and paprika.

    • Add the garlic cloves and white wine (or broth/water).

    • Massage the chicken thoroughly, making sure every piece is coated.

    • Cover and refrigerate for at least 1 hour (or overnight for more flavor).

  2. Prepare the Potatoes

    • Peel and cut potatoes into wedges.

    • Wash well, then place them on a baking tray.

    • Season with salt, pepper, and a drizzle of olive oil. Toss to coat evenly.

  3. Assemble & Bake

    • Place the marinated chicken on top of the potatoes.

    • Pour the leftover marinade over everything.

    • Bake in a preheated oven at 220°C (430°F) for about 1 hour, or until the chicken is golden brown and cooked through.
