Delicious Carrot & Banana Power Juice/Smoothie
This recipe makes a vibrant, nutritious, and naturally sweet drink, perfect for a healthy boost. You can adjust the consistency to be more like a juice or a thicker smoothie.
Yields: 1-2 servings (depending on desired consistency and glass size) Prep time: 10 minutes
Ingredients:
- 2-3 medium carrots (about 150-200g)
- 1 ripe banana
- 1/2 – 1 cup cold water or unsweetened plant-based milk (almond, oat, or soy work well) – adjust for desired consistency
- Optional additions for enhanced flavor and nutrition:
- 1/2 inch fresh ginger, peeled (adds a zesty kick)
- 1/2 teaspoon ground turmeric (for anti-inflammatory benefits, subtle flavor)
- A pinch of black pepper (enhances turmeric absorption)
- Juice of 1/2 a lemon or lime (brightens flavor)
- 1/2 cup ice cubes (for a colder, thicker drink)
- 1-2 dates, pitted (for extra sweetness if carrots are not very sweet)
- A scoop of protein powder (for a more filling meal replacement)

Prepare the Carrots:
- Wash the carrots thoroughly under cold water.
- Peel the carrots using a vegetable peeler.
- Cut the peeled carrots into smaller, manageable pieces (rounds or chunks) to help them blend easily. If your blender isn’t very powerful, chop them into smaller pieces.

Prepare the Banana:
- Peel the banana.
- Break or slice the banana into a few pieces.

Combine Ingredients in Blender:
- Add the chopped carrots and banana to your blender.
- Pour in 1/2 cup of cold water or plant-based milk. Start with less liquid, as you can always add more to reach your desired consistency.
- If using any optional additions like ginger, turmeric, black pepper, lemon/lime juice, or dates, add them now.

Blend Until Smooth:
- Secure the lid on your blender.
- Start blending on a low speed, gradually increasing to high speed.
- Blend until the mixture is completely smooth and creamy. This may take 1-3 minutes, depending on your blender’s power. If the mixture is too thick and the blades are struggling, add more water or milk, a tablespoon at a time, until it blends smoothly.
- If you desire a colder drink, add 1/2 cup of ice cubes and blend again until the ice is crushed and incorporated.

- Taste the juice/smoothie. If you prefer it sweeter, you can add a few more pieces of banana or a pitted date and blend again.
- If you want a thinner, more juice-like consistency, add more water or milk until you reach your preference. For a thicker, more smoothie-like consistency, you can add a few more banana pieces or even a spoonful of chia seeds (and let it sit for 5 minutes to thicken).
