Crispy Tofu Bowls with Peanut Sauce

Ingredients:

Tofu:

  • 1 block firm tofu
  • 1 tbsp soy sauce
  • 1 tbsp oil
  • 2 tbsp cornstarc
  • ¼ tsp garlic powder & ginger

Sauce:

  • 3 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tsp maple syrup
  • 1 tsp sesame oil
  • 1 tsp sriracha
  • Juice of ½ lime
  • Water to thin

Bowl:

  • ¾ cup rice
  • 1 cup edamame
  • ¾ cucumber, diced
  • Green onion & sesame seeds (optional)

Steps:

1. Cook rice (¾ cup rice + 1½ cups water).

2. Prep tofu: press, cube, toss with sauce + starch, then air fry (12–15 min at 400°F) or bake (25–30 min at 400°F).

3. Make sauce: mix all sauce ingredients, thin with water.

4. Assemble: rice + tofu + edamame + cucumber. Top with sauce and garnish.
