Crispy Gruyère Chickpeas & Spinach with Lemon
Ingredients:
- 1 (15 oz) can chickpeas, drained and rinsed
- 1 tablespoon olive oil
- ½ teaspoon smoked paprika
- ¼ teaspoon salt
- 2 cups fresh spinach
- 1 tablespoon lemon juice
- ½ teaspoon lemon zest
- ⅓ cup grated Gruyère cheese
- Freshly ground black pepper, to taste
Directions:
Preheat oven to 400°F (200°C). Pat chickpeas dry with a paper towel. Toss with olive oil, smoked paprika, and salt. Spread on a baking sheet and roast for 25–30 minutes, shaking halfway through, until golden and crispy.
Meanwhile, wilt spinach in a skillet over medium heat with a splash of water. Stir in lemon juice, zest, and season with black pepper.
Combine the crispy chickpeas with the wilted spinach and top generously with grated Gruyère. Serve immediately as a warm, savory side or light meal.
