Crispy Fried Zucchini with Creamy Garlic Dip
These crispy zucchini rounds are a perfect appetizer or snack, paired with a flavorful creamy garlic dip!
Ingredients:
For the Zucchini:
- 1 large zucchini, sliced into 1/4-inch rounds
- 1 cup all-purpose flour
- 1/2 cup panko bread crumbs
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- 1/4 cup milk
- Oil for frying
For the Creamy Garlic Dip:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon chopped parsley
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
Prepare the Zucchini:
In a shallow bowl, combine the flour, paprika, garlic powder, salt, and black pepper. In another bowl, whisk together the beaten eggs and milk.
Coat the Zucchini:
Dip each zucchini round into the flour mixture, shaking off the excess. Then, dip it into the egg mixture, and finally coat it with panko bread crumbs, pressing gently to adhere.
Fry the Zucchini:
In a large skillet, heat oil over medium-high heat. Once hot, carefully add the coated zucchini rounds in batches, frying until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Make the Creamy Garlic Dip:
In a small bowl, mix together the mayonnaise, sour cream, chopped parsley, minced garlic, salt, and black pepper until well combined.
