Crispy Cheese Potato Sticks Recipe

Ingredients:
- 2 large potatoes (about 400g, peeled and boiled)
- ½ cup (60g) shredded cheese (cheddar, mozzarella, or a mix)
- ¼ cup (30g) cornflour (cornstarch)
- ¼ cup (30g) all-purpose flour
- ½ teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ½ teaspoon garlic powder (optional)
- ½ teaspoon paprika (optional, for extra flavor)
- 1 tablespoon butter (softened)
- 1 tablespoon milk (if needed, to adjust dough consistency)
- 1 cup breadcrumbs (for coating, use panko for extra crunch)
- 1 egg (beaten, for coating)
- Oil for frying (vegetable or canola)
Instructions:
Step 1: Prepare the Potato Mixture
- Peel and boil 2 large potatoes until fork-tender (about 15 minutes). Drain and let them cool slightly.
- Mash the potatoes in a bowl until smooth.
- Add cheese, cornflour, all-purpose flour, salt, black pepper, garlic powder, paprika, and butter to the mashed potatoes. Mix well to form a dough.
- If the dough feels too dry, add 1 tablespoon of milk to adjust the consistency.
Step 2: Shape the Sticks
- Lightly grease your hands with oil to prevent sticking.
- Take a portion of the dough and roll it into a rectangular block, about ½ inch thick.
- Use a knife to cut the dough into even-sized sticks (about 3 inches long).
Step 3: Coat the Sticks
- Dip each potato stick into the beaten egg.
- Roll it in breadcrumbs, ensuring an even coating.
- Place the coated sticks on a plate and refrigerate for 10 minutes to firm up (this helps prevent breaking during frying).
Step 4: Fry the Potato Sticks
- Heat oil in a deep pan over medium heat (about 350°F or 175°C).
- Fry the sticks in small batches for 3-4 minutes, turning occasionally, until golden brown and crispy.
- Remove from oil and drain on a paper towel.

- Serve hot with ketchup, mayonnaise, garlic sauce, or cheese dip!

- Baking: Preheat oven to 400°F (200°C), place sticks on a baking sheet, spray with oil, and bake for 15-18 minutes, flipping halfway.
- Air Fryer: Preheat to 375°F (190°C), place in a single layer, and air-fry for 10-12 minutes, flipping halfway.
