Creamy Feta & Avocado Chickpeas Salad with Herb Dressing
Ingredients:
For the Salad:
1 can (15 oz) chickpeas, drained and rinsed
1 ripe avocado, diced
1/2 cup crumbled feta cheese
1/2 cup cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup cherry tomatoes, halved
2 tbsp fresh parsley, chopped
For the Herb Dressing:
3 tbsp olive oil
1 tbsp lemon juice
1 tsp red wine vinegar
1/2 tsp Dijon mustard
1 garlic clove, minced
1 tbsp fresh dill, chopped (or 1 tsp dried)
Salt and black pepper to taste
Directions:
In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, Dijon mustard, garlic, dill, salt, and pepper until well combined.
In a large bowl, combine chickpeas, avocado, feta, cucumber, red onion, cherry tomatoes, and parsley.
Pour the herb dressing over the salad and gently toss to combine.
Let sit for 5–10 minutes before serving to allow flavors to meld.
Serve chilled or at room temperature. Enjoy!
