Creamy Chicken & Carrot Spread

A light, protein-rich spread made with tender chicken, sweet carrots, and creamy cheese. Perfect for sandwiches, toast, or as a dip for crackers.


Ingredients

  • 1 baked chicken breast (or boiled/steamed)

  • 2 medium baked or boiled carrots

  • 2 tbsp cream cheese or ricotta

  • 2 tbsp mayonnaise (optional, for creamier texture)

  • 1 garlic clove (optional, for extra flavor)

  • Salt & black pepper, to taste

  • Drizzle of olive oil or lemon juice, for freshness


‍ Instructions

  1. Cook the Chicken & Carrots

    • Boil, bake, or steam the chicken breast with a pinch of salt and herbs until fully cooked.

    • Boil or steam the carrots until soft but not mushy.

  2. Blend Everything Together

    • Shred the chicken into pieces.

    • Place chicken, carrots, cream cheese (and mayo if using), garlic, and a splash of lemon juice or olive oil into a food processor.

    • Blend until smooth and creamy.

  3. Season & Adjust

    • Taste, then add salt and pepper as needed.

    • Blend again briefly to mix well.

  4. Serve & Enjoy

    • Spread on toast, baguette slices, pita bread, or serve as a dip with crackers and veggie sticks.

    • Store in the refrigerator for up to 3 days in an airtight container.


Chef’s Tip: For a smoky version, add a touch of smoked paprika or swap the lemon drizzle for a few drops of liquid smoke.
