Cottage Cheese Flatbread
Ingredients:
- 1 cup all-purpose flour (plus extra for dusting)
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup cottage cheese (small or large curd)
- 1 large egg
- 1/2 tsp garlic powder (optional)
- 1/4 cup shredded mozzarella or parmesan (optional for extra flavor)
- Fresh herbs (chives, parsley, or dill) for garnish
Instructions:
Preheat oven:
Preheat to 400°F (200°C). Line a baking sheet with parchment paper.
Make dough:
In a bowl, mix flour, baking powder, salt, and garlic powder (if using).
Add cottage cheese and egg. Stir until dough comes together. It will be slightly sticky.
Shape flatbread:
Lightly flour a surface and your hands. Turn dough out and gently knead a couple of times.
Roll or press dough into a roughly 8-inch circle or oval about 1/4-inch thick on the prepared baking sheet.
Add cheese (optional):
Sprinkle shredded mozzarella or parmesan over the top if desired.
Bake:
Bake for 15–18 minutes, until golden brown and cooked through.
Serve:
Garnish with fresh herbs. Enjoy warm with toppings like sautéed veggies, smoked salmon, or a drizzle of olive oil.
Variations:
Add herbs like rosemary or thyme to the dough.
Mix in some finely chopped spinach or sun-dried tomatoes.
Use Greek yogurt instead of cottage cheese for a tangier flavor.”
