Cottage Cheese Chocolate Mousse
Decadent, protein-packed chocolate mousse using cottage cheese and cocoa powder—no guilt allowed.
Ingredients:
1 cup cottage cheese (preferably full-fat for creaminess)
1/2 cup unsweetened cocoa powder
3 tablespoons honey or maple syrup (adjust to taste)
1 teaspoon vanilla extract
Pinch of salt
Optional: whipped cream or chocolate shavings for topping
Instructions:
Blend: In a high-speed blender or food processor, combine the cottage cheese, cocoa powder, honey (or maple syrup), vanilla extract, and salt.
Process: Blend until completely smooth and creamy. This may take 1–2 minutes depending on your blender. Scrape down the sides as needed to ensure everything is well mixed.
Taste & Adjust: Taste and adjust sweetness or cocoa as desired.
Chill (optional but recommended): For a firmer mousse, transfer the mixture into serving dishes and refrigerate for at least 30–60 minutes.
Serve: Top with whipped cream, chocolate shavings, berries, or a sprinkle of sea salt if desired.
Tips:
Use a fine-mesh strainer or cheesecloth to strain cottage cheese if it’s too watery.
For extra protein, add a scoop of chocolate or vanilla protein powder (reduce cocoa or sweetener slightly if you do this).
Store in the fridge for up to 3 days.
