Coconut Lime Fish with Mango Salsa

Ingredients:

– 4 white fish fillets (such as tilapia or cod)

– 1 cup shredded coconut

– 1 lime, juiced and zested

– Salt and pepper to taste

– 1 mango, diced

– 1/2 red onion, diced

– 1/2 red bell pepper, diced

– 1/4 cup fresh cilantro, chopped

– 1 jalapeño, seeded and diced

– 1 tablespoon honey

– 1 tablespoon olive oil

Instructions:

1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. In a bowl, mix together the shredded coconut, lime zest, salt, and pepper.

3. Brush the fish fillets with lime juice, then coat them with the coconut mixture, pressing gently to adhere.

4. Place the coated fish fillets on the prepared baking sheet and bake for 15-20 minutes, or until the fish is cooked through and the coconut is golden brown.

5. While the fish is baking, prepare the mango salsa by combining the diced mango, red onion, red bell pepper, cilantro, jalapeño, honey, and olive oil in a bowl. Mix well to combine.
