Coconut Chia Protein Pudding – creamy, nourishing, and packed with goodness!

Ingredients:

1 cup coconut milk (canned or carton)
¼ cup chia seeds
1 tablespoon maple syrup or honey
1 teaspoon vanilla extract
½ teaspoon cinnamon (optional)
1 scoop vanilla protein powder (optional)
¼ cup toasted coconut flakes (for topping)
1 teaspoon chia seeds (for topping)

Instructions:

In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup, vanilla extract, cinnamon, and protein powder if using.
Let the mixture sit for 5 minutes, then stir again to prevent clumping.
Cover and refrigerate for at least 3 hours or overnight for best results.
Before serving, stir the pudding well and transfer to serving bowls.
Top with toasted coconut flakes and extra chia seeds for texture and presentation.
