Classic French Pastry Cream Recipe

Ingredients:

  • 3 eggs
  • 2 chicken fillets (boneless, skinless)
  • 2 cloves garlic, minced
  • 2 tablespoons of your favorite spice mix (paprika, pepper, oregano, etc.)
  • 2 tablespoons corn starch
  • 1 tablespoon salt
  • Oil, for frying (or grilling)
  • Salad (lettuce, cherry tomatoes, etc. for serving & garnish)

Instructions:

  1. Separate the Eggs:
    • Crack the eggs and separate the yolks from the egg whites. Place the yolks in one bowl and the egg whites in another. You’ll be using both later, so set them aside.
  2. Prep the Chicken:
    • Slice the chicken fillets into even strips, depending on the size of the strips you prefer. Try to make them uniform for even cooking.
  3. Season the Chicken:
    • In a large mixing bowl, combine the chicken strips with the egg yolks, minced garlic, and your spice mix (paprika, pepper, oregano, etc.). Add salt and corn starch to the bowl. Mix everything together so the chicken is fully coated. If you have time, let this marinate for at least 30 minutes (or up to 2 hours) in the fridge for more flavor.
  4. Whip the Egg Whites:
    • Beat the egg whites in a separate bowl until they form soft peaks. This will help give the chicken a light, crispy coating once fried.
  5. Coat the Chicken:
    • Gently dip each marinated chicken strip into the beaten egg whites. Ensure each strip is fully coated.
  6. Fry or Grill the Chicken:
    • For frying: Heat oil in a large pan over medium-high heat. Once hot, carefully add the coated chicken strips and fry them for about 3-4 minutes per side or until they are golden brown and crispy.
    • For grilling: Preheat your grill to medium-high heat. Grill the chicken strips for about 4-5 minutes per sideor until fully cooked, with crispy edges.
  7. Serve:
    • Once your chicken strips are crispy and golden, remove them from the pan or grill. Serve immediately over a bed of fresh lettuce, cherry tomatoes, or your favorite salad greens.
    • Garnish with extra spices, a squeeze of lemon, or dipping sauces like honey mustard, ranch, or barbecue sauce.

Tips for Extra Crispy Chicken:

  • Cornstarch is the secret to getting that ultra-crispy texture. It helps create a crunchy exterior while keeping the inside juicy.
  • Letting the chicken marinate really enhances the flavor, so don’t skip that step!
  • If you want an extra crunch, you can double-dip the chicken in breadcrumbs after the egg white coating.
