Cinnamon-Infused Pound Cake

Ingredients

  • 2 cups (250g) all-purpose flour

  • 1 tsp baking powder

  • ¼ tsp salt

  • 1 cup (225g) unsalted butter, softened

  • 1 ½ cups (300g) granulated sugar

  • 4 large eggs

  • ½ cup (120ml) whole milk

  • 2 tsp vanilla extract

  • 2 tsp ground cinnamon

  • 2 tbsp brown sugar (optional, for a cinnamon-sugar swirl)


‍ Instructions

  1. Prep the oven & pan

    • Preheat oven to 350°F (175°C).

    • Grease and flour a 9×5-inch loaf pan or a bundt pan.

  2. Mix dry ingredients

    • In a bowl, whisk together flour, baking powder, salt, and cinnamon.

  3. Cream butter & sugar

    • In a large mixing bowl, beat butter and sugar until light and fluffy.

    • Add eggs one at a time, mixing well after each.

    • Stir in vanilla extract.

  4. Combine wet & dry

    • Gradually add the dry mixture, alternating with milk.

    • Begin and end with the flour mixture. Mix until just combined (avoid overmixing).

  5. Optional swirl

    • For a sweet cinnamon ripple, gently fold in brown sugar with a few light swirls.

  6. Bake

    • Pour batter into the prepared pan and smooth the top.

    • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool & serve

    • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

    • Slice and enjoy warm or at room temperature.
