Chocolate Lava Cake Cookies

Ingredients:

  • 1 cup all-purpose flour

  • 1/2 cup unsweetened cocoa powder

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 6 oz chocolate truffles or soft chocolate ganache (for filling)

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.

  3. In a large bowl, cream together the butter and sugar until light and fluffy.

  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

  5. Gradually add the dry ingredients into the wet mixture. Mix until a soft dough forms.

  6. Scoop about 1 tablespoon of dough, flatten it slightly in your hand, place a truffle or spoonful of ganache in the center, and carefully wrap the dough around to seal.

  7. Place the cookies on the prepared baking sheet, spaced apart.

  8. Bake for 10–12 minutes until the edges are set but the centers are still soft.

  9. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
