Chocolate Banana Oat Cake

Ingredients:

120 g rolled oats (about 1½ cups)

250 ml hot milk (1 cup – dairy or plant-based)

2 medium ripe bananas
-
2 eggs (or vegan substitute: 2 flax eggs)

2 tbsp unsweetened cocoa powder
-
1 tsp baking powder
-
½ tsp baking soda
-
1 tsp vanilla extract (optional)
-
Pinch of salt
-
(Optional: cinnamon, dark chocolate chips, chopped walnuts)
Vegan Option:
Flax eggs = Mix 2 tbsp ground flaxseed + 6 tbsp water. Let sit for 5–10 minutes to gel.
Instructions:
1. Soak the oats:
Pour the hot milk over oats. Let soak for 10 minutes to soften.
2. Preheat oven:
To 350°F (175°C). Grease or line a loaf pan or square baking dish.
3. Blend the base:
Add to a blender:

Soaked oats & milk

Bananas
-
Eggs or flax eggs
-
Cocoa powder
-
Baking powder & soda
-
Vanilla
-
Salt
Blend until smooth.
4. Pour & bake:
Pour batter into your pan. Tap gently.
Bake 30–35 minutes, or until a toothpick comes out mostly clean.
5. Cool & slice:
Cool in pan for 10 mins. Transfer to rack. Slice & enjoy warm or chilled!
Tips & Ideas:

For extra sweetness: Add a few soft dates or 1–2 tbsp maple syrup.

Add crunch: Sprinkle with chopped nuts or seeds before baking.

Storage:
