CHICKEN AND VEGETABLE SOUP
There’s nothing easier than making homemade chicken vegetable soup in the crock pot or freezer! Rice, pasta, potatoes, and other ingredients are optional additions!

INGREDIENTS FOR CHICKEN AND VEGETABLE SOUP
Soup
- One or two teaspoons of olive oil
- 1 and a half pounds of chicken, refer to the notes
- Pepper and salt
- two tsp butter
- One little yellow onion, chopped
- ¾ cup chopped carrots
- 2 celery ribs
- 2 garlic clovesclove minced
- One tsp of hot sauc
- One tsp of Worcestershire sauce
- Seven cups chicken stock
- one and a half cups frozen mixed veggies (corn and green beans)
Seasoning
- One tsp of dehydrated parsley
- Half a teaspoon Dried oregano, mustard powder, and basil, each
- One-half teaspoon of pepper
Guidelines For Chicken And Vegetable Soup
Dry off the chicken and add salt and pepper to taste. In a 4.5-quart soup pot, warm the olive oil over medium-high heat. Add the chicken and fry it for about 3 minutes on each side, or until a golden crust forms. (It’s alright if the center isn’t done; it will boil and cook through in the soup eventually.)
After removing the chicken, set it aside. After letting it rest for ten minutes, chop or shred it.
In the same saucepan, melt butter over medium heat. To “clean” the pot’s sides and bottom, use a silicone spatula. This will incorporate the flavor-enhancing brown “fond” into the soup.
Simmer the celery, carrots, and onions for five minutes.
Stir in the seasonings, Worcestershire sauce, spicy sauce, and garlic. Mix everything together.
Pour in the chicken broth. After bringing to a boil, lower heat to a simmer. Simmer, uncovered, for fifteen minutes after adding the chicken back to the broth along with any juice from the plate.
Include the frozen veggies. For ten to fifteen minutes, simmer with a slightly covered dish. Present!
Note for chicken and vegetable soup
Crock-Pot Approach
- Add all the ingredients, including the diced but raw chicken, to the slow cooker. Cook for 3–4 hours on high or 7–8 hours on low.
- Better Still! Sear the chicken first, if you can. (You can do it on the stovetop with this crock pot without having to dirty another pot), after which you can add the butter and “clean” the pot’s bottom with a silicone spatula to enhance the flavor of the broth and give the chicken more color and texture. After that, add the remaining ingredients and simmer for 3–4 hours on high or 7-8 hours on low.
