Chicken and Dumplings

Ingredients:

1 whole chicken, cut into pieces
2 cups all-purpose flour
½ cup unsalted butter
3 carrots, peeled and chopped
3 celery stalks, chopped
1 onion, diced
4 cups chicken broth
2 cups milk
Salt and pepper, to taste
Instructions:

Cook the Chicken:
Place the chicken pieces in a large pot and cover with water. Bring to a boil, reduce heat to a simmer, and cook until the chicken is tender and fully cooked, about 30-40 minutes. Remove the chicken from the pot, let it cool slightly, then shred the meat off the bones. Set the chicken aside.

Prepare the Base:
In a large pot, melt the butter over medium heat. Add the diced onion, chopped carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.

Make the Broth:
Add the chicken broth and shredded chicken to the pot with the vegetables. Season with salt and pepper to taste. Bring the mixture to a gentle simmer.

Prepare the Dumpling Dough:
In a mixing bowl, combine the flour and a pinch of salt. Gradually mix in the milk until a soft dough forms.

Cook the Dumplings:
Using a spoon, drop small spoonfuls of the dough into the simmering pot. Cover the pot with a lid and cook the dumplings for 10-12 minutes, or until they are fluffy and cooked through.

Finish and Serve:
Stir gently to combine the chicken, dumplings, and vegetables. Taste and adjust seasoning if needed. Serve warm and enjoy the comforting flavors of homemade Chicken and Dumplings.
