Total Time: 15 minutes
Ingredients:
-
1 baguette, sliced into ½-inch thick rounds
-
1 cup cherry tomatoes, halved or quartered
-
8 oz burrata cheese
-
2 tablespoons extra-virgin olive oil (plus more for drizzling)
-
1 garlic clove, peeled and halved
-
Fresh basil leaves, torn or thinly sliced
-
Salt & freshly ground black pepper, to taste
-
Balsamic glaze, for drizzling (store-bought or homemade)
Instructions:
1. Toast the Bread
-
Preheat your oven to 400°F (200°C) or heat a skillet/grill pan over medium-high.
-
Brush both sides of each baguette slice lightly with olive oil.
-
Toast:
-
In the oven: 3–5 minutes until edges are golden and crisp.
-
On the skillet or grill pan: About 2 minutes per side.
-
-
Once toasted, rub the cut side of the garlic clove onto the warm bread slices for a subtle garlic aroma.
2. Marinate the Tomatoes
-
In a small bowl, combine the cherry tomatoes, 1 tablespoon olive oil, a pinch of salt, and black pepper.
-
Let them marinate for 5 minutes to draw out the juices and intensify flavor.
3. Assemble the Bruschetta
-
Tear the burrata into creamy pieces and gently place a spoonful on each slice of toasted bread.
-
Top with the marinated tomatoes, letting the juices drip slightly into the cheese.
-
Add a generous sprinkle of fresh basil.
4. Finish with Flair
-
Drizzle with balsamic glaze.
-
Finish with a pinch of flaky sea salt and a crack of black pepper, if desired.
5. Serve Immediately
-
Best enjoyed fresh while the bread is warm and crispy, and the burrata is cool and creamy.
Pro Tips:
-
DIY Balsamic Glaze:
Simmer ½ cup balsamic vinegar with 1 tsp honey over low heat for 5–7 minutes until reduced and syrupy. Let cool before drizzling. -
Make it a Platter:
Serve components deconstructed so guests can build their own! -
Add-ons:
Try sliced prosciutto, roasted garlic, or a drizzle of chili oil for variation.
Why It Works:
-
The creamy burrata balances the acidity of marinated cherry tomatoes, while the crispy toast provides crunch.
-
The garlic rub adds depth without overpowering, and balsamic glaze ties it all together with a tangy sweetness.
