Cheesy Zucchini Pie
Ingredients:
- 2 cups grated zucchini (squeeze out moisture)
- 4 eggs
- 1 cup shredded mozzarella or cheddar (use low-fat if desired)
- 1/2 cup cottage cheese or ricotta
- 1/4 cup almond flour (optional crust)
- 1 tsp garlic powder
- Salt & pepper to taste
Instructions:
Preheat oven to 375°F (190°C).
Mix all ingredients in a bowl.
Pour into greased pie dish (or crust if using).
Bake for 35–40 mins until golden and set.
Cool slightly, slice, and enjoy!
