Cheesy Zucchini Pie

Ingredients:

  • 2 cups grated zucchini (squeeze out moisture)
  • 4 eggs
  • 1 cup shredded mozzarella or cheddar (use low-fat if desired)
  • 1/2 cup cottage cheese or ricotta
  • 1/4 cup almond flour (optional crust)
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions:

Preheat oven to 375°F (190°C).

Mix all ingredients in a bowl.

Pour into greased pie dish (or crust if using).

Bake for 35–40 mins until golden and set.

Cool slightly, slice, and enjoy!
