Cheesy Zucchini Corn Fritters

These easy fritters are a perfect way to use up fresh zucchini and corn. They’re savory, golden, and pan-fried to crispy perfection — even picky eaters go back for seconds!


Ingredients (Makes about 8 fritters):

  • 2 medium zucchinis, grated

  • ½ cup corn (fresh, canned & drained, or thawed from frozen)

  • ½ cup shredded cheese
    → Cheddar works great, but mozzarella, Monterey Jack, or Colby also shine

  • 2 large eggs

  • ¼ cup all-purpose flour

  • 1 tablespoon grated Parmesan cheese (optional but adds a salty, umami kick)

  • Salt, to taste (start with ½ tsp and adjust)

  • Cooking oil, for pan-frying (vegetable, canola, or olive oil)


Instructions:

1. Prep the Zucchini

  • Grate the zucchini using the coarse side of a box grater.

  • Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as you can. This step is key for crispy fritters — too much water will make them soggy.

2. Mix the Batter

  • In a large bowl, combine:

    • Squeezed zucchini

    • Corn

    • Shredded cheese

    • Eggs

    • Flour

    • Parmesan (if using)

    • Salt

  • Stir until everything is evenly mixed into a thick batter.

3. Heat the Oil

  • Add 2–3 tablespoons of oil to a non-stick skillet or cast-iron pan over medium heat.

  • Once hot (but not smoking), you’re ready to cook.

4. Cook the Fritters

  • Scoop about 2 tablespoons of batter per fritter into the pan.

  • Flatten gently with the back of a spoon or spatula.

  • Cook for 2 to 3 minutes per side, or until golden brown and crispy.

  • Flip gently and repeat on the other side.

  • Drain on paper towels if needed.

5. Serve Warm

  • Serve while hot and crisp.

  • These fritters are delicious on their own, or try dipping them in sour cream, ranch, or a herbed yogurt sauce.
