Cheesy Vegetable Potato Casserole
Ingredients
•3–4 medium potatoes, peeled and diced
•1 cup broccoli florets
•1/2 cup cherry tomatoes, halved
•1 small onion, chopped
•1 cup grated cheese (cheddar, mozzarella, or a mix)
•3 eggs
•1 cup milk or cream
•2 tbsp olive oil or butter
•Salt and black pepper, to taste
•1/2 tsp paprika (optional)
•Chopped parsley, for garnish Instructions
1. Preheat Oven:
•Preheat your oven to 190°C (375°F).
2. Cook the Potatoes:
•In a pan, boil the diced potatoes in salted water for 5–7 minutes (just until slightly tender but not fully cooked).
•Drain and set aside.
3. Prepare the Egg Mixture:
•In a bowl, whisk together eggs, milk (or cream), salt, pepper, and paprika.
4. Assemble the Casserole:
•Grease a baking dish or oven-safe skillet with butter or olive oil.
•Add the boiled potatoes, chopped onion, broccoli florets, and cherry tomatoes.
•Pour the egg mixture evenly over the
vegetables.
•Sprinkle the grated cheese on top.
5. Bake:
•Bake in the preheated oven for 25–30 minutes, or until the top is golden and set.
6. Garnish and Serve:
.Sprinkle with chopped parsley before serving.
•Serve hot as a main dish or side.
