Cheesy Tater Tot Meatloaf Casserole



Ingredients:
1 cup ketchup
1 cup Sweet Baby Ray’s Hickory & Brown Sugar barbecue sauce
2 lbs lean ground beef
30 Ritz crackers, crushed
2 oz Lipton onion soup mix
2 large eggs
24 oz frozen tater tots
2 cups shredded mozzarella and cheddar cheese blend
1/4 cup real beef bits
Directions:
Preheat the oven to 375°F (190°C).
In a large bowl, combine the ground beef, crushed crackers, onion soup mix, eggs, and ketchup. Mix until well combined.
Press the meatloaf mixture evenly into a large baking dish.
Spread the barbecue sauce over the top of the meat mixture.
Arrange the frozen tater tots evenly on top of the sauce.
Sprinkle the shredded cheese and beef bits over the tater tots.
Bake in the preheated oven for 45 minutes, or until the meatloaf is cooked through and the tots are golden and crispy.
Let rest for 10 minutes before serving with ketchip.
