Cheesy Spinach and Shrimp Stuffed Catfish 1f41f1f9c01f364
Ingredients:
4 catfish fillets, deboned
1 cup fresh spinach, chopped
1/2 cup cooked shrimp, chopped
1 cup cheddar cheese, shredded
1/2 cup cream cheese, softened
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
1/2 cup breadcrumbs
2 tablespoons olive oil
Fresh parsley, for garnish
Directions:
Preheat your oven to 375°F (190°C).
In a bowl, mix spinach, shrimp, cheddar cheese, cream cheese, garlic powder, paprika, salt, and pepper.
Lay the catfish fillets flat on a clean surface. Spoon the filling mixture onto one half of each fillet.
Carefully fold the other half over the filling and secure with toothpicks.
Brush each stuffed fillet with olive oil and coat with breadcrumbs.
Place on a baking sheet and bake for 25-30 minutes or until the fish is cooked through and the topping is golden.
Garnish with fresh parsley before serving.
