Cheesy Scalloped Potatoes Recipe

A classic comfort dish layered with tender potatoes, creamy cheese sauce, and a golden bubbly topping. Perfect for holidays, Sunday dinners, or whenever you crave cozy food.

Ingredients (Serves 6)

  • 4 cups thinly sliced potatoes (Yukon Gold or Russet work best)

  • 3 tbsp butter

  • 3 tbsp all-purpose flour

  • 1 ½ cups milk (whole milk or 2% for creaminess)

  • 1 cup grated sharp cheddar cheese

  • ½ cup grated cheese (extra cheddar or Gruyere for topping)

  • Salt, to taste

  • Optional: ½ cup sliced green onions, pinch of cayenne pepper for a little heat

‍ Instructions

1. Prepare the Potatoes

  • Wash, peel (if desired), and thinly slice the potatoes (about ⅛ inch thick).

  • Set aside in a bowl of cold water to prevent browning while you make the sauce.

2. Make the Cheese Sauce

  • In a saucepan over medium heat, melt the butter.

  • Add the flour and whisk for 1–2 minutes until lightly golden (this forms a roux).

  • Slowly pour in the milk, whisking continuously to avoid lumps.

  • Let simmer for 3–4 minutes until slightly thickened.

  • Remove from heat, stir in the sharp cheddar cheese, salt, and cayenne (if using) until smooth and creamy.

3. Assemble the Dish

  • Preheat oven to 375°F (190°C) and lightly grease a baking dish.

  • Layer half of the sliced potatoes evenly in the dish.

  • Pour half of the cheese sauce over them, spreading evenly.

  • Add the remaining potatoes on top, then pour over the rest of the sauce.

  • Sprinkle with the extra ½ cup cheese on top.

  • Let rest for 10 minutes before serving to set the layers.

Tips & Variations

  • Add ham or bacon bits between the layers for a heartier dish.

  • Swap cheddar for Gruyere or Swiss cheese for a nutty twist.

  • For extra creaminess, mix in ½ cup heavy cream with the milk.

  • Garnish with fresh parsley or chives before serving.

  • Serve as a side with roasted chicken, steak, or holiday turkey.

  • Pair with a fresh salad or steamed vegetables for balance.

  • Leftovers reheat beautifully in the oven or microwave.
