Cheesy Herb Mashed Potato Puffs are a fun twist on classic mashed potatoes. They’re crispy on the outside, fluffy on the inside, and perfect for using up leftovers. Serve them as a side dish with grilled chicken or steak, or as a party appetizer with dips like sour cream or tangy aioli.

Ingredients

  • 2 cups mashed potatoes

  • 1 cup shredded cheddar cheese

  • 1/4 cup grated Parmesan cheese

  • 2 large eggs

  • 1/4 cup all-purpose flour

  • 2 tablespoons chopped fresh chives

  • 1 teaspoon garlic powder

  • Salt and pepper, to taste

  • Non-stick cooking spray


Directions

  1. Preheat oven to 400°F (200°C). Lightly spray a muffin tin with non-stick cooking spray.

  2. In a large bowl, combine: mashed potatoes, cheddar, Parmesan, eggs, flour, chives, garlic powder, salt, and pepper. Mix until well blended.

  3. Spoon mixture into muffin cups, filling each about 3/4 full.

  4. Bake for 20–25 minutes, or until tops are golden brown and crispy.

  5. Let cool slightly in the pan before removing. Serve warm.
