2 cups mashed potatoes

1 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 large eggs

1/4 cup all-purpose flour

2 tablespoons chopped fresh chives

1 teaspoon garlic powder

Salt and pepper, to taste

Non-stick cooking spray
Directions

Preheat oven to 400°F (200°C). Lightly spray a muffin tin with non-stick cooking spray.

In a large bowl, combine: mashed potatoes, cheddar, Parmesan, eggs, flour, chives, garlic powder, salt, and pepper. Mix until well blended.

Spoon mixture into muffin cups, filling each about 3/4 full.

Bake for 20–25 minutes, or until tops are golden brown and crispy.
