Ingredients:

2 cups (250g) all-purpose flour

1 tsp salt

1 tsp sugar

1 tsp instant yeast

¾ cup (180ml) warm water

2 tbsp olive oil (plus more for greasing & brushing)

1 cup mozzarella cheese (shredded, or a mix of mozzarella & cheddar)

Fresh rosemary or oregano (optional, for flavor)

A pinch of chili flakes (optional, for spice) ️
Instructions:

Make the Dough

In a large bowl, mix warm water, sugar, and yeast. Let sit for 5 minutes until foamy.

Add flour, salt, and 1 tbsp olive oil. Mix until a dough forms.

Knead for 5–6 minutes until smooth and elastic.

First Rise

Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

Prepare the Pan

Brush a non-stick pan (about 9–10 inches wide) with olive oil.

Transfer the dough to the pan and gently press it to spread evenly.

Cover and let rest for another 20 minutes.

Add Cheese & Toppings

Make dimples in the dough with your fingertips.

Drizzle olive oil on top.

Sprinkle generously with shredded cheese.

Add rosemary, oregano, or chili flakes if desired.

Cook on the Stove

Cover the pan with a lid and cook on low heat for about 15–18 minutes until the bottom is golden and crisp.

Carefully flip the focaccia, sprinkle some extra cheese on the other side, and cook for another 5–7 minutes.
