Cheesy Broccoli Balls

Ingredients:
5 cups vegetable oil for frying

1 (16 oz) package chopped frozen broccoli, thawed and drained

4 cups shredded sharp Cheddar cheese

3 ½ cups dry bread crumbs

Salt and pepper to taste

Instructions:
Heat Oil: Preheat your deep-fryer or a large, heavy-bottomed pot with 5 cups of vegetable oil to 375°F (190°C).

Cook Broccoli: In a medium saucepan, bring 1 cup of water to a boil. Add the thawed and drained broccoli, return to a boil, and cook covered for about 5 minutes, until the broccoli is firm but tender. Drain and set aside.

Melt Cheese: In another medium saucepan over low heat, melt the shredded Cheddar cheese. Once melted, stir in the cooked broccoli until well combined. Remove from heat and allow the mixture to cool and thicken for approximately 15 minutes.

Prepare Breading: In a medium bowl, mix the dry bread crumbs with salt and pepper to taste. Spread the breadcrumb mixture onto a large piece of wax paper or a flat surface.

Form and Coat Balls: Once the broccoli and cheese mixture has cooled and thickened, form it into small balls (about the size of a golf ball). Roll each ball in the breadcrumb mixture until fully coated.

Fry the Balls: Carefully place the coated balls into the preheated oil and deep fry for about 5 minutes, or until they are golden brown and crispy. Work in batches to avoid overcrowding the fryer.

Drain and Serve: Remove the fried broccoli cheese balls from the oil using a slotted spoon and drain on paper towels to remove excess oil. Serve warm and enjoy!
