Ingredients

2 medium zucchinis, thinly sliced

  • 1 cup shredded cheese (cheddar, mozzarella, Gruyere)
  • ½ cup grated Parmesan
  • 2 large eggs
  • ½ cup milk or cream
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper, to taste
  • 1 tbsp olive oil (for greasing)
  • Optional: breadcrumbs or almond flour topping
  • Optional herbs: parsley, thyme, oregano

Instructions

Preheat oven to 375°F (190°C). Grease baking dish.

Prep zucchini: Salt and blot slices for less moisture (optional but recommended).

Whisk eggs, milk, spices, salt & pepper.

Assemble: Layer zucchini, pour custard, top with cheese and Parmesan.

Bake uncovered 25–30 mins until golden and set.

Cool & garnish with herbs. Serve warm!
