Ingredients
2 medium zucchinis, thinly sliced
- 1 cup shredded cheese (cheddar, mozzarella, Gruyere)
- ½ cup grated Parmesan
- 2 large eggs
- ½ cup milk or cream
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt & pepper, to taste
- 1 tbsp olive oil (for greasing)
- Optional: breadcrumbs or almond flour topping
- Optional herbs: parsley, thyme, oregano
Instructions
Preheat oven to 375°F (190°C). Grease baking dish.
Prep zucchini: Salt and blot slices for less moisture (optional but recommended).
Whisk eggs, milk, spices, salt & pepper.
Assemble: Layer zucchini, pour custard, top with cheese and Parmesan.
Bake uncovered 25–30 mins until golden and set.
Cool & garnish with herbs. Serve warm!
