Cheesy Baked Vegetables Casserole
Ingredients:
- 1 cup broccoli florets
- 1 cup chopped bell peppers (red, yellow, green)
- 1 cup cherry tomatoes
- 1 carrot, grated
- 1 zucchini, diced
- 1/2 cup sweet corn (optional)
For the cheese sauce:
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk
- 1 cup shredded mozzarella or cheddar
- 1 tsp garlic powder
- Salt & pepper to taste
- 1 tbsp chopped herbs (parsley, dill, or mixed herbs)
Instructions:
1. Preheat oven to 190°C (375°F).
2. In a pan, steam or blanch the broccoli, carrots, and zucchini until slightly tender (about 3–4 minutes).
3. In a saucepan, melt butter, stir in flour to form a roux.
4. Gradually whisk in milk. Cook until thickened.
5. Stir in cheese, garlic powder, herbs, salt, and pepper.
6. In a baking dish, layer all the vegetables.
7. Pour the cheese sauce evenly over them.
8. Top with extra cheese if desired.
9. Bake for 20–25 minutes until golden and bubbly.
