Cheesy and Crispy Garlic Zucchini Steaks – The Ultimate Low-Carb Side Dish!

Ingredients:
2 large zucchinis (cut lengthwise into thick “steaks”)
2 tbsp olive oil (or melted butter)
3 cloves garlic (minced)
½ tsp salt (or to taste)
¼ tsp black pepper
½ tsp Italian seasoning (optional)
¼ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
2 tbsp bread crumbs (optional for extra crunch)
Fresh parsley or basil for garnish
Instructions:
Preheat Oven:
Preheat your oven to 425°F (220°C) and line a baking tray with parchment paper.
Prepare Zucchini:
Wash zucchinis and slice them lengthwise into ½-inch thick “steaks.”
Pat dry with a paper towel to remove moisture — this helps them crisp up nicely.
Garlic Oil Mixture:
In a small bowl, mix olive oil, minced garlic, salt, pepper, and Italian seasoning.
Brush and Bake:
Brush the garlic oil mixture evenly over both sides of the zucchini steaks.
Arrange them on the baking tray in a single layer.
First Bake:
Bake for 12–15 minutes, until they start to soften and turn slightly golden.
Add Cheese Topping:
Remove from oven and sprinkle Parmesan, mozzarella, and breadcrumbs evenly over the top.
Final Bake:
Return to the oven and bake for 5–8 more minutes, or until cheese is melted, bubbly, and golden brown.
Garnish & Serve:
Sprinkle chopped fresh parsley or basil on top before serving.

For extra crispiness, broil for 1–2 minutes at the end.
