I make this celery soup twice a week, and my whole family absolutely loves it! It’s creamy, comforting, and packed with healthy vegetables — perfect for lunch, dinner, or even meal prep.
Ingredients:
• 300 g celery, chopped
• 3 garlic cloves, minced
• 3 potatoes, peeled & diced
• 1 courgette (zucchini), chopped
• 35 g parsley, chopped
• Salt & black pepper, to taste
How to Make It:

Sauté the base:
In a pot, add a little oil or butter. Sauté the garlic for 1 minute until fragrant. -
Add vegetables:
Add celery, potatoes, and courgette. Stir for 3–4 minutes. -
Season:
Add salt, black pepper, and half the parsley. -
Add water:
Pour in enough water to cover the vegetables (about 1–1.2 liters). -
Cook:
Bring to a boil, then reduce heat and simmer for 20–25 minutes until everything is soft. -
Blend:
Use a blender to blend until smooth and creamy. -
Finish:
Add the remaining parsley, stir, taste, and adjust salt/pepper.
Serve with:

✔ A drizzle of olive oil
✔ Fresh herbs
✔ A dollop of yogurt or cream (optional)
