    • Versatile: Perfect alongside Korean BBQ, as a side with dinner, or enjoyed on its own.
    • Kid-Friendly: A great way to get kids excited about eating their veggies.

Ingredients Notes For Korean Cheese Corn:

    • Corn: Use canned sweet corn for convenience, or fresh corn kernels if in season for the best flavor.
    • Mayonnaise: Adds creaminess and depth to the dish.
    • Sugar: A touch of sugar enhances the natural sweetness of the corn.
    • Mozzarella Cheese: Melts beautifully, creating a gooey and stringy topping. You can also mix in a bit of cheddar for extra flavor.
    • Butter: Provides richness and helps bind the corn and cheese together.
    • Salt and Pepper: Season to taste.
    • Green Onions or Parsley: For garnish, adding a pop of color and freshness.

    Recipe Steps:

    1. Preheat the Oven:
      • Preheat your oven to 375°F (190°C) or prepare your broiler if you prefer to broil the cheese topping.
    2. Prepare the Corn Mixture:
      • Drain the corn well if using canned. In a mixing bowl, combine the corn, a good dollop of mayonnaise, a sprinkle of sugar, salt, and pepper. Mix well until all the corn is evenly coated.
    3. Cook the Corn:
      • In a skillet, melt a small amount of butter. Add the corn mixture and sauté briefly until the corn is heated through and infused with the butter.
    4. Add Cheese:
      • Transfer the heated corn to an oven-safe dish. Sprinkle a generous layer of shredded mozzarella (and cheddar, if using) over the top.
    5. Bake or Broil:
      • Bake in the preheated oven for about 10-15 minutes or until the cheese is fully melted and bubbly. For a browner, more caramelized top, broil for the last few minutes of cooking.
    6. Garnish and Serve:
      • Garnish with chopped green onions or parsley. Serve hot as a side dish or with toothpicks as a snack.

    Storage Options:

    • Refrigerate: Store any leftovers in an airtight container in the refrigerator for up to 3 days.
    • Reheat: Best reheated in the oven or microwave to maintain the creaminess of the cheese.

    INGREDIENTS

    • 2 cups frozen corn kernels, thawed
    • 1/2 cup mayonnaise
    • 1/2 cup mozzarella cheese, shredded
    • 1/2 cup cheddar cheese, shredded
    • 1 green onion, chopped
    • 1 tablespoon sugar (optional, adjust to taste)
    • Salt and pepper, to taste
    • 1 teaspoon Korean chili powder or paprika (optional, for color and a hint of spice)

    INSTRUCTIONS

    1. Preheat the Oven:
      • Preheat your oven to 400°F (200°C). This high temperature is perfect for getting a nicely browned top.
    2. Mix Ingredients:
      • In a large mixing bowl, combine the thawed corn kernels, mayonnaise, half of the mozzarella, half of the cheddar, green onion, and sugar if using. Season with salt, pepper, and Korean chili powder or paprika if desired.
      • Mix everything thoroughly until the corn is well-coated with the mayonnaise and the ingredients are evenly distributed.
    3. Transfer to a Baking Dish:
      • Transfer the corn mixture to a suitable ovenproof dish. Spread the mixture evenly.
    4. Add Cheese:
      • Sprinkle the remaining mozzarella and cheddar cheeses over the top of the corn mixture. This will create a deliciously cheesy crust as it bakes.
    5. Bake:
      • Place the dish in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly. For a golden top, you can switch the oven to broil for the last 2-3 minutes, but watch it closely to prevent burning.
    6. Serve:
      • Serve hot, ideally as a side with Korean BBQ or as a savory-sweet appetizer. It pairs wonderfully with grilled meats or as a standalone dish with some crusty bread.

  • Old Fashioned Goulash

    Old Fashioned Goulash

Old Fashioned Goulash recipe is the one I grew up with. You cook everything on the stove top, and then bake until all the flavors come together and it gets bubbly and hot. It goes by a million different names, but in Minnesota this is what we called it.

This recipe is completely different from the rest of the world.  It is a hearty beefy macaroni dish with lots of tomatoes.  Depending on the part of the United States that you grew up in this also goes by the name Chop Suey or Slumgullion.

If you are trying to stretch your food budget, goulash is a great choice. A single pound of ground beef can stretch to several servings when combined with pasta and a richly seasoned tomato-based sauce. It’s become a popular standard for many not just for flavor, but for convenience and affordability.

Since the bulk of this recipe can be kept in my pantry easily, it is often one I decide to whip up at the last minute when I just don’t feel like making anything else. It’s even easy enough that my teenager can whip this up for us when it’s his weeknight dinner night.

    Ingredients:

    • 1/2 lb macaroni
    • 1 1/2 lbs ground beef
    • 1 large onion, diced
    • garlic salt, pepper, chili powder, & hot sauce to taste
    • 2 (14.5 oz) cans whole stewed tomatoes, undrained
    • 2 tablespoons ketchup
    • Tomato juice as needed

    PREPARATION:

Cook the macaroni to al dente according to package directions. While it’s cooking, brown the ground beef and onion together in an extra-large skillet or in a dutch oven.
Drain and season with spices to taste. In a large bowl, mash tomatoes with potato masher and add to beef along with the ketchup. Drain macaroni and add to the beef mixture, stirring well. Taste and add additional seasoning as needed.
I didn’t need to add any tomato juice to mine, but if you like yours very juicy you can add as much tomato juice as you like. Phyllis adds it to her leftovers, which I would also recommend, because the noodles tend to soak up all the juice with time.

    Enjoy !

  • CHICKEN CHOW MEIN AND SAUCE

    CHICKEN CHOW MEIN AND SAUCE

Chicken Chow Mein is a popular Chinese dish that typically consists of stir-fried chicken, vegetables, and noodles. The dish can be served with a variety of sauces, such as soy sauce or oyster sauce. Here are some health and nutritional benefits of Chicken Chow Mein and the sauce:

    1. Protein: Chicken is a great source of lean protein, which is essential for building and repairing tissues, supporting immune function, and maintaining healthy skin and hair.

    2. Vegetables: Chicken Chow Mein is typically loaded with vegetables like bell peppers, carrots, cabbage, and bean sprouts. These vegetables provide important vitamins, minerals, and dietary fiber, contributing to overall health and digestion.

    3. Noodles: The noodles used in Chicken Chow Mein are often made from wheat or rice. While they do provide carbohydrates, they can also be a source of energy. Opting for whole wheat noodles or brown rice noodles can provide more fiber and nutrients.

    4. Low in fat: When prepared with minimal oil and lean cuts of chicken, Chicken Chow Mein can be a relatively low-fat dish. By controlling the amount of oil used in cooking, you can reduce the overall fat content.

    5. Antioxidants: The vegetables in Chicken Chow Mein are rich in antioxidants, which help protect the body against damage from harmful molecules called free radicals. Antioxidants are known to support overall health and reduce the risk of chronic diseases.

    6. Sauce considerations: The sauce used in Chicken Chow Mein can vary, but it’s important to be mindful of its ingredients. Soy sauce, for example, is a common ingredient in Chinese cuisine and can be high in sodium. Opting for reduced-sodium soy sauce or using other flavorings like ginger, garlic, and herbs can help reduce sodium intake.

    7. Portion control: While Chicken Chow Mein can be a nutritious dish, portion control is key. Pay attention to the quantity you consume to avoid overeating and consuming excessive calories.

As with any dish, the overall health and nutritional benefits of Chicken Chow Mein depend on the specific ingredients used, cooking methods, and portion sizes. It’s always a good idea to opt for fresh, high-quality ingredients and cook at home when possible, as this allows you to control the amount of oil, salt, and other seasonings used in the dish.

    Ingredients:

Heat a large wok or pan with olive oil over medium-heat. Cut your chicken breasts into bite-sized strips and cook them in the oil until golden brown. Remove strips and set aside.

Add carrots, cabbage and pressed garlic and saute for a few minutes until veggies are slightly softened and the cabbage is a bit translucent.

Add chicken and noodles back into the pan. Pour sauce over the top and continue cooking all the ingredients together for another 2 minutes.

Garnish your chow mein with chopped green onions and serve the noodles straight from the pan and piping hot!

Certainly! Here are some tips for preparing Chicken Chow Mein and the sauce:

    1. Use high-quality ingredients: Start with fresh vegetables, lean chicken breast, and good-quality noodles. This will ensure that your dish is flavorful and nutritious.

    2. Preparing the chicken: Cut the chicken into thin strips or bite-sized pieces for even cooking. Marinate the chicken in a mixture of soy sauce, garlic, ginger, and a touch of cornstarch for about 15-20 minutes before stir-frying. This will help infuse flavor and tenderize the meat.

    3. Stir-frying technique: When stir-frying the chicken and vegetables, make sure your pan or wok is very hot. This helps to quickly sear the ingredients, maintaining their texture and locking in the flavors. Stir-fry the chicken first until it’s almost cooked through before adding the vegetables.

    4. Vegetable selection and preparation: Choose a variety of colorful vegetables like bell peppers, carrots, cabbage, bean sprouts, and snow peas. Slice them thinly and uniformly to ensure even cooking. Add the vegetables in the order of their cooking time, starting with the ones that take longer to cook.

    5. Noodle cooking: Cook the noodles separately according to the package instructions until they are al dente. Drain them well and rinse under cold water to stop the cooking process and prevent them from sticking together. Toss them with a bit of oil to prevent clumping.

    6. Sauce balance: The sauce is a crucial component of Chicken Chow Mein. Use a combination of soy sauce, oyster sauce, or other preferred sauces to create a balanced flavor profile. Adjust the amount of sauce according to your taste preferences, but be cautious with the sodium content if using soy sauce.

    7. Customize the flavors: Feel free to experiment with additional ingredients to enhance the flavor of your Chicken Chow Mein. Add minced garlic, grated ginger, chili flakes, or sesame oil to the sauce for extra depth. You can also garnish with chopped green onions, cilantro, or toasted sesame seeds for added freshness and texture.

    8. Serve immediately: Chicken Chow Mein is best enjoyed fresh and hot. Serve it immediately after cooking to maintain the texture of the noodles and the crispness of the vegetables.

Remember to adjust the recipe according to your dietary preferences and restrictions. Enjoy your homemade Chicken Chow Mein with your favorite sauce and savor the delicious flavors!
