    For “crust””
    • 1/4 cup salted butter, browned
    • 2 cups mini marshmallows
    • 2 cups Rice Krispies cereal
    For “filling”:
    • 1/3 cup salted butter
    • 3 cups mini marshmallows
    • Orange food coloring *optional*
    • 1 teaspoon pumpkin pie spice, plus extra for garnish
    • 4 cups Rice Krispies cereal
    • Whipped cream can, for serving
    Preparation
    1. Grease a 9×9 baking dish and set aside.
    2. For the crust layer, heat a pan over medium heat with the butter until it starts to turn golden, then add marshmallows until melted, then fold in the rice krispies. Spat the mixture into the prepared 9×9 and evenly flatten. Set aside to cool.
    3. For the filling layer, melt the butter in the pot, then once it’s melted add the pumpkin pie spice and a few drops of orange food coloring. Add marshmallows until melted then fold in the rice krispies. Spat the mixture over the crust layer and evenly pat.
    4. To serve, cut into 16 squares, then top each square with a dollop of whipped cream and a dash of pumpkin spice or cinnamon.

    For brownies:
    • 1/2 cup granulated sugar
    • 1/4 cup unsalted butter
    • 2 tablespoons whole milk
    • 1 1/2 cups milk chocolate chips
    • 2/3 cup flour
    • 1/2 teaspoon pumpkin spice
    • 1/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 2 eggs
    • 1 teaspoon vanilla extract
    For frosting:
    • 3/4 cup unsalted butter, softened
    • 3 tablespoons pumpkin puree
    • 2 cups powdered sugar
    • 1 1/2 teaspoons pumpkin pie spice
    • 1 teaspoon vanilla extract
    • A pinch of kosher salt
    Preparation
    1. Preheat the oven 325 F and prepare a 8×8 baking dish.
    2. In a sauce pot, combine the milk, butter, and sugar until simmering. Turn off the heat and stir in chocolate chips until smooth. Let cool slightly.
    3. Combine and whisk together the dry ingredients for the brownies. Set aside
    4. Whisk the eggs and vanilla into the chocolate mixture, then gradually add the dry ingredients to the batter.
    5. Whisk together the dry ingredients into the batter, then use a spatula to add batter to prepared baking dish.
    6. Bake for 25 – 30 minutes or until a toothpick inserted into the center comes out clean. Let cool. Make frosting by combining the softened butter and pumpkin puree in a stand mixer fitted with the whisk attachment.
    7. Add in pumpkin pie spice, vanilla, and salt. Use a spatula to clean the sides, then slowly incorporate the powdered sugar until a smooth buttercream forms.
    8. Once brownies are cool, spread frosting over brownies, then cut.

    Grandmama’s Homemade Coconut Cake is a from scratch cake with decadent (and no fail) 7 minute icing. This is a favorite of our family for holidays and special occasions year round. I found it in an old box of papers that belonged to my grandmother. She had typed it out on letterhead from the company where she worked and later came back, circled it, and wrote in “Real good”. After trying it for myself, I had to agree! When it comes to moist cakes, this is the mother of them all. If a crumb drops from your fork, don’t be surprised if you find your finger chasing it around your plate – it’s just that good.

    Top it off with no fail seven minute frosting and a sprinkling of coconut and prepare yourself for a coconut cake experience unlike any other! One of the great things about Grandmama’s seven minute frosting is that you don’t need a double boiler to make it and you can forget fretting over whether or not the weather is dry enough – this comes out perfect every time regardless. If you’re making a layer cake and you like generous amounts of frosting, I suggest doubling the frosting recipe.

    Transfer the mixing bowl to your mixer, and with the whisk attachment, beat on high until stiff, glossy peaks form (about 6 minutes).

  • AIR FRYER ROAST BEEF

    AIR FRYER ROAST BEEF

    Air fryer roast beef is simple to cook, but also tender and flavorsome. This recipe uses rosemary, thyme, salt, and a little olive oil, for perfect classic roast beef.

    You might think of roast beef as a fancy, complicated dish to cook, but it’s actually very simple! Especially air fryer roast beef.

    Air frying is a quick roasting method, so it’s ready in about half the time it would normally take in a regular oven.

    This stops the meat from drying out, and because the meat sits in a basket rather than in a pan of oil it absorbs less oil, but still retains the moisture making it tender and juicy.

    This air fryer roast is one of my favorites to serve, especially for a Sunday roast or a holiday dinner. If you like this recipe you should also try my recipe to roast lamb in an air fryer, and also my recipe for a pork roast in an air fryer (especially if it has crackling as the hot air gets it super crispy!).

    Ingredients

    • 2lb/ 900g beef roast
    • 1 tablespoon olive oil
    • 1 medium onion, (optional)
    • 1 teaspoon salt
    • 2 teaspoons rosemary and thyme, (fresh or dried)

    Instructions

    1. Preheat air fryer to 390°F (200°C).
    2. Mix sea salt, rosemary and oil on a plate.
    3. Pat the beef roast dry with paper towels. Place beef roast on plate and turn so that the oil-herb mix coats the outside of the beef.
    4. If using, peel onion and cut it in half, place onion halves in the air fryer basket.
    5. Place beef roast in the air fryer basket.
    6. Set to air fry beef for 5 minutes.
    7. When the time is up, change the temperature to 360°F (180°C). Flip the beef roast over half way through the cooking time if required by your air fryer [Note 1].
    8. Set the beef to cook for an additional 30 minutes. This should give you medium-rare beef. Though is best to monitor the temperature with a meat thermometer to ensure that it is cooked to your liking. Check it early, and cook for additional 5 minute intervals if you prefer it more well done.
    9. Remove roast beef from air fryer, cover with kitchen foil and leave to rest for at least ten minutes before serving. This allows the meat to finish cooking and the juices to reabsorb into the meat.
    10. Carve the roast beef thinly against the grain and serve with roasted or steamed vegetables, wholegrain mustard, and gravy.

    1. Some air fryers require food to be turned over during cooking, some don’t. Check your manual if you are unsure if this is required for your air fryer.

    Ingredients

    • 3 cups shredded chicken
    • 1 -16 ounce ricotta cheese, whipped
    • ¼ cup butter, unsalted
    • 1 cup your choice Buffalo Flavor Sauce, such as Frank’s Red Hot
    • 16 ounces large shell pasta
    • Salt and pepper to taste, (optional)
    • 2 cups Monterey Jack cheese

    Instructions

    FIRST STEP:

    Reheat the shredded chicken in a skillet for just a few minutes

    Melt in the butter with the shredded chicken and add in the cayenne pepper

    SECOND STEP:

    Using a cheesecloth, squeeze as much of the liquid as possible from the ricotta cheese.

    In a bowl, place the cheese in and add the shredded chicken

    THIRD STEP:

    Refrigerate this mix for at least 3 hours.

    Cook the large shell pasta in lightly salted water, do not cook until al dente’, you want the pasta still slightly firm

    FOURTH STEP:

    Drain the pasta

    Preheat the oven to 350*

    FIFTH STEP:

    Lightly spray a 9×13 pan with nonstick spray

    Using a cookie scoop, fill each shell with some of the filling

    Place the shells into the prepared baking pan

    Prepare a biscuit from crumbled Oreo biscuits and melted butter, then pour into a mold lined with baking paper and bake at 160 degrees for 10 minutes. Meanwhile, prepare the cream.

    Whisk in the cream cheese, like, white and brown sugar. Then add the melted chocolate and stir everything. Add the egg and yolk one by one to the mixture and mix. Finally, add the vanilla extract.

    Pour the mixture over the biscuits and bake at 160 degrees for 60 minutes.

    When the cake is baked, leave it to cool to room temperature, take the cake out of the mold and pour the glaze over it. Prepare the glaze by heating the whipped cream to boiling, put the chocolate in the hot whipped cream and combine.

    Leave the cake in the fridge for 60 minutes.

    Sprinkle the grated chocolate over the cake.
