Cabbage & Cucumber Slim Salad

Ingredients

⅓ green cabbage (shredded)

¼ tsp salt (for the cabbage)

1–2 cucumbers (thinly sliced)

½ onion (thinly sliced)

1 tsp rice vinegar (or apple cider vinegar)

⅓ red cabbage (shredded)

1 carrot (grated or julienned)

20 g walnuts (roughly chopped)
Instructions
1. Prepare the Vegetables

Shred green cabbage and place in a bowl with ¼ tsp salt. Toss and let sit for 10 minutes to soften slightly.

Slice cucumbers thinly, sprinkle with ¼ tsp salt, and set aside for 5 minutes. Drain excess water.

Slice the onion thinly, shred red cabbage, and grate the carrot.
2. Mix the Salad

In a large salad bowl, combine green cabbage, cucumbers, onion, red cabbage, and carrot.
3. Add Dressing & Nuts

Drizzle with rice vinegar. Toss well.

Sprinkle with walnuts for crunch.
