Cabbage & Cucumber Slim Salad

This refreshing salad combines crisp cabbage, juicy cucumbers, and a light tangy dressing. Perfect for a light dinner or side dish, it’s packed with fiber and nutrients while staying low in calories.


Ingredients

  • ⅓ green cabbage (shredded)

  • ¼ tsp salt (for the cabbage)

  • 1–2 cucumbers (thinly sliced)

  • ¼ tsp salt (for the cucumbers)

  • ½ onion (thinly sliced)

  • 1 tsp rice vinegar (or apple cider vinegar)

  • ⅓ red cabbage (shredded)

  • 1 carrot (grated or julienned)

  • 20 g walnuts (roughly chopped)


‍ Instructions

1. Prepare the Vegetables

  • Shred green cabbage and place in a bowl with ¼ tsp salt. Toss and let sit for 10 minutes to soften slightly.

  • Slice cucumbers thinly, sprinkle with ¼ tsp salt, and set aside for 5 minutes. Drain excess water.

  • Slice the onion thinly, shred red cabbage, and grate the carrot.

2. Mix the Salad

  • In a large salad bowl, combine green cabbage, cucumbers, onion, red cabbage, and carrot.

3. Add Dressing & Nuts

  • Drizzle with rice vinegar. Toss well.

  • Sprinkle with walnuts for crunch.

4. Serve

  • Enjoy immediately as a refreshing dinner salad or side dish.
