Blueberry Cottage Cheese Pancake Bites – Air Fryer or Oven, High-Protein & Sweet

Fluffy, high-protein Blueberry Cottage Cheese Pancake Bites are perfect for quick breakfasts or snacks, made in the air fryer or oven in just 20 minutes! Bursting with juicy blueberries, they’re a healthy, kid-friendly treat.


1 cup cottage cheese (full-fat or low-fat)

2 large eggs

½ ripe banana, mashed

½ cup oat flour (or almond flour for low-carb)

1 tablespoon honey or maple syrup (optional)

1 teaspoon vanilla extract

1 teaspoon baking powder

Pinch of salt

½ cup fresh or frozen blueberries

 


Instructions

Preheat & Prep: For oven, preheat to 350°F (175°C) and grease a mini muffin tin or line with parchment cups. For air fryer, set to 320°F (160°C) and prepare silicone molds.

Blend the Batter: In a blender, combine cottage cheese, eggs, mashed banana, honey (if using), and vanilla extract. Blend until smooth. Add oat flour, baking powder, and salt, then blend or whisk until lump-free.

Add Blueberries: Gently fold in blueberries with a spatula to evenly distribute.

Bake or Air Fry: For oven, spoon batter into muffin cups (¾ full) and bake for 18–22 minutes until golden. For air fryer, fill silicone molds (¾ full) and cook for 10–12 minutes until fluffy.

Cool & Serve: Let cool for 5 minutes before removing from tin or molds. Enjoy warm or chilled with a drizzle of maple syrup or yogurt.
