Banana Ice Cream
This recipe is simple and requires only a few ingredients to create a creamy and delicious frozen treat.
Yields: Varies depending on banana size. Prep time: 5-10 minutes Freeze time: 2-4 hours
Ingredients:
- 4 large ripe bananas
- 1 teaspoon vanilla extract
- 2 tablespoons almond or peanut butter (optional, for added flavor and creaminess)
Instructions:
- Prepare the Bananas: Peel the ripe bananas and slice them into 1-inch thick pieces. The riper the bananas, the sweeter and creamier the ice cream will be.
- Freeze the Bananas: Place the banana slices in a single layer on a parchment-lined baking sheet or in a freezer-safe bag. Freeze for at least 2 hours, or until they are solid.
- Blend the Ingredients: Once the banana slices are completely frozen, transfer them to a food processor or a high-powered blender. Add the vanilla extract and your choice of almond or peanut butter.
- Process to Perfection: Blend the ingredients. At first, the mixture will look crumbly, but as you continue to process, it will transform into a thick, creamy consistency similar to soft-serve ice cream. You may need to stop and scrape down the sides of the food processor a few times to ensure all the pieces are blended evenly.
- Serve Immediately (Soft-Serve) or Freeze for Scoops:
- For a soft-serve consistency: Serve the ice cream immediately.
- For a scoopable, firmer consistency: Transfer the mixture to a freezer-safe container and freeze for another 1-2 hours. This will allow it to firm up further, making it perfect for scooping into bowls or cones.
- Optional Toppings: Serve with chopped nuts, a drizzle of chocolate sauce, or fresh banana slices for an extra-special treat.
