Balsamic Roasted Cranberry and Brie Crostini
INGREDIENTS:
- 2 tablespoons melted butter
- 2 tablespoons olive oil
- 1/2 French baguette, sliced thinly
- 12 ounces fresh cranberries
- 2 tablespoons balsamic vinegar
- 1/2 cup sugar
- 1 tablespoon fresh rosemary, chopped
- 4 ounces triple cream brie, sliced
- Fresh thyme (optional, for garnish)
INSTRUCTIONS:
Preheat oven to 425°F (220°C).
Mix melted butter and olive oil. Brush both sides of baguette slices with the mixture and arrange on a baking sheet.
Combine cranberries, balsamic vinegar, sugar, and rosemary in a small bowl. Spread evenly on a parchment-lined baking sheet.
Roast cranberries for 5 minutes. Add baguette slices to the oven and roast for 6 minutes. Flip baguette slices and roast 4-6 minutes until golden and crispy.
Remove both trays from the oven.
Place a slice of brie on each toasted baguette. Top with roasted balsamic cranberries. Garnish with fresh thyme if desired.
Serve warm or at room temperature.
