Baked Lemon Herb Fish with Roasted Veggies

Ingredients

 

  • 3 white fish fillets (cod, halibut, or sea bass)
  • 1 lb baby potatoes, halved
  • 1 cup cherry tomatoes
  • 1 medium zucchini, sliced into rounds
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp garlic powder
  • Salt & pepper, to taste
  • 1 lemon, thinly sliced
  • Fresh dill, for garnish
  • Juice of ½ lemon

 

Directions

 

1️⃣ Preheat Oven

Preheat to 400°F (200°C). Lightly grease a large baking dish.

 

2️⃣ Prepare Veggies

In a bowl, toss baby potatoes, zucchini & cherry tomatoes with 2 tbsp olive oil, oregano, thyme, garlic powder, salt & pepper.

 

3️⃣ Start Roasting

Spread veggies in the dish and roast 15 min.

 

4️⃣ Season Fish

Pat fish fillets dry, season with salt & pepper. Drizzle with 1 tbsp olive oil & lemon juice.

 

5️⃣ Combine & Bake

‍ After 15 min, stir veggies, then place seasoned fish on top.

Add lemon slices on each fillet.

Bake 15–18 min more, until fish flakes easily with a fork.

 

6️⃣ Garnish & Serve

Sprinkle with fresh dill.

️ Serve straight from the pan—warm, rustic, and full of sunshine!
