Preparation Method:

1. Prep the Eggplant:

Slice the eggplant into 0.5 cm thick rounds. Place in a colander or bowl, sprinkle lightly with salt, and let it sit for 15 minutes. This draws out excess moisture and any bitterness.

2. Slice the Other Vegetables:
