Ingredients:
4 boneless, skinless chicken breasts (pounded to even thickness)
Salt and pepper, to taste
8 oz cream cheese, softened
1/4 cup mayonnaise
1 cup shredded cheddar cheese, divided
1 tsp garlic powder
1 cup broccoli buds (use only the green tops, no stems)
Directions:
Preheat your oven to 425ºF (220ºC).
Grease a large roasting dish and place the chicken breasts in it. Season both sides of the chicken with salt and pepper.
In a medium bowl, mix the softened cream cheese, mayonnaise, 1/2 cup of the shredded cheddar cheese, garlic powder, salt, pepper, and broccoli buds until well combined.
Spread the cream cheese mixture evenly over each chicken breast. Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
Place the dish in the preheated oven and bake for 20 minutes. Check the internal temperature of the chicken with a meat thermometer. If needed, cover with foil and bake for an additional 15-20 minutes, or until the internal temperature reaches 165ºF (74ºC).
Remove from the oven, let it rest for a few minutes, and serve.
