Baked Caprese Chicken with Cherry Tomatoes and Mozzarella



Ingredients:
4-6 chicken breasts
4 tbsp olive oil, divided
3 cloves garlic
1 pint cherry tomatoes
6 oz mozzarella cheese
2 tbsp balsamic vinegar
Salt and pepper, to taste
1 tsp each, oregano and onion powder
Fresh basil
Radish slices (optional)
Directions:
Preheat oven to 400°F (200°C).
In a large sheet pan, arrange chicken breasts.
Season each breast with 2 tbsp of olive oil, salt, pepper, onion powder, and oregano.
Add half a pint of whole cherry tomatoes and garlic cloves to the sheet pan.
Bake for 20-23 minutes, depending on the size and thickness of the breasts. Check internal temperature to ensure the chicken is nearly fully cooked.
Remove from oven and add mozzarella cheese. Return to oven for an additional 5-8 minutes.
Meanwhile, in a small bowl, whisk the remaining 2 tbsp of olive oil with balsamic vinegar and season with salt and pepper.
Cut the remaining tomatoes in half or quarters. Set aside.
When the chicken is done , remove from oven. Top each breast with the cut tomatoes and fresh basil. Drizzle with the balsamic mixture and serve.
